Abondance Cheese
Abondance is a hard cheese made of unpasteurized cow milk from three types of cows: Tarentaise, Montbeliarde and Abondance. It is named for the village of Abondance in the French Alps of Haut-Savoie. It is made in a copper vat using animal rennet and then cut, stirred, pressed and aged on wood boards.
